How It Works: The Operational Flow

This model is designed to be plug-and-play with zero overhead for the restaurant.

  1. DESIGNATION: We formally register your location as an authorized Saddlehill Sales Outlet with the NJ ABC.
  2. COMPENSATION: You determine your preferred margin per bottle, which is paid to you as a restocking fee upon delivery. (The most common selection is $10 per bottle / $120 per case).
  3. LEASE: We execute an ABC-approved lease to sub-lease a small area of your premises for wine storage. If you currently lease your space, you may require landlord approval if your primary lease contains a "subletting" restriction.
  4. STOCKING: Saddlehill delivers cases directly to your location as needed to maintain inventory levels.
  5. IMMEDIATE PAYMENT: Saddlehill pays your $120/case stocking fee immediately upon delivery (based on a $10/bottle margin).
  6. SERVICE: Your staff manages the wine service, facilitating either on-site consumption or "cork-and-carry" takeout for guests.
  7. SETTLEMENT: On a monthly basis, you remit the total collected payments from wine sales to Saddlehill Cellars.
